Homemade granola with blueberries and mint

Ingredients

  • 500 g. oat flakes
  • 60 g. blueberry
  • mint leaves
  • 50 g. of raisins or sultanas
  • 100 g. of honey
  • 60 g. vegetable oil
  • 30 g. sesame oil
  • 5 g. vanilla essence
  • 1/2 teaspoon ground cinnamon
  • 50 g. brown sugar

 

Preparation of homemade granola

We start by mixing all the liquid ingredients in a deep and wide container that should be large enough to contain all of the ingredients.

First, we pour the honey and add the vegetable oil, the sesame oil and the vanilla essence.

We beat  the mixture with a metal kitchen tool or  fork until all the ingredients are well integrated.

Next, we add the ground cinnamon and the brown sugar. We beat again.

Add the oat flakes to the bowl and, with the help of your hands, very clean, stir from the bottom up and mix well.

It is important that this step be done carefully so that all the oat flakes are covered with the mixture of oils and  the flavor is the same in each tablespoon of granola that we eat.

When the oats are ready, cover a baking tray with baking paper and spread the mixture on it.

 

Granola baking and final presentation

We preheat the oven to 150ºC.  We put the tray in the oven, set the oven to medium temperature and  cook for 10 minutes.

After this time, we remove the tray from the oven. We stir so that the oats from the base rise to the surface and toast.

We put the tray in the oven again. Cook for 10 more minutes before removing and stirring a second time.

This time we add the blueberries and raisins.

We bake a third and last time for another 10 minutes or the time necessary for the oats to toast without burning.

This will depend on the oven, but be very careful because we do not want it to brown too much (because it would be bitter) or let the granola mix burn.

When the desired color is achieved, we  remove the tray from the oven and let it cool before transferring the granola to an airtight container.

Homemade granola keeps in perfect condition for at least two to three weeks as long as  we keep it in an airtight container and away from moisture.

You may never get to see how long it can last. Because without a doubt it is so good that you will not be able to stop eating it.

Finally, we add a touch of fresh mint leaves to serve.
